I just had to share this spice rub recipe because it is seriously the BEST! Granted, each serving is a bit high in sodium, it is still considered a moderate amount per serving. Spice rub + Salmon = The Ultimate YUM!
I honestly cannot remember where I got this rub recipe from. So please note that I am NOT taking any credit for the recipe!! If someone happens upon this blog and says “HEY! I created that spice rub,” PLEASE tell me!! Otherwise, I will just say I have no idea. Not trying to copyright!
This is the rub…isn’t she pretty? Once mixed, you just lather it all over your salmon fillets! I used about 12-13oz of Wild Alaskan Salmon and it was the perfect amount. I left the skin on the bottom so I only rubbed the top. That’s what you are supposed to do right??

This meal looks super healthy and very body builder-esk. Don’t worry, I won’t be turning you all in to crazy restrictive eaters. I just had asparagus and brown rice leftover and since they only needed reheating, it was the QUICK AND EASY option!
Oh and I forgot to picture the garlic bread. On a half loaf of French bread, I mixed ~2 T butter with 1 clove of minced garlic, and parsley. Came out to about 4-5 portions. WOW was that good. Brandon thought it was a bit too garlicky but I’m a garlic gal so I could have eaten the whole loaf!
Spice Rubbed Salmon
Serves 4 (3oz portions)
1/2 tsp salt
1/2 tsp cumin
1/2 tsp ground coriander
1/4 tsp paprika
1/8 tsp ground cinnamon
1/8 tsp pepper
2 (6oz) salmon fillets
2 cups sliced onion
Directions:
Preheat oven 400 degrees. Combine the first 6 ingredients and rub over the fillets. Place the onion in the bottom of a 9 x 9″ pan coated with cooking spray and place the salmon on top. Bake ~20 minutes.
Nutritional Profile (per 3 oz salmon fillet + onions): 194 calories, 7.4g Fat (1.1g sat, 3.0g poly, 2.5g mono), 63mg Cholesterol, 343 mg sodium, 694 mg Potassium, 7.3 g carbohydrates, 1.7 g Fiber, 24 g Protein
