I have a strong affection for whole grain oats. There is just something about the versatility and different textures you can create that inspires me to keep using them. Today I decided to share one of my favorite oatmeal concoctions! Banana Nut Bread Oatmeal literally tastes like you are eating a slice of banana bread.
I began buying plain Old Fashioned rolled oats because of my small grocery budget back in college. I was always a huge fan of plain Cheerios but they were something close to $4 a box. I just could not justify spending that kind of money when I went through cereal like water. So, I apprehensively made the switch and it forced me to get creative with my concoctions. However, this is my ultimate favorite and I encourage anyone to try it. Especially those who may think that plain Old Fashioned oats are too bland.
Banana Nut Bread Oatmeal

1/2c. Old Fashioned rolled oats
1 c. low-fat milk (I use skim or 1%)
cinnamon to taste (I like a lot)
dash of nutmeg
1 tsp vanilla
1 mashed banana
2 T dried fruit (craisins, raisins, etc)
1 T crumbled walnuts
Directions:
Boil milk in saucepan over medium heat, stirring constantly to prevent sticking. Once boiling, stir in oats and 1/2 of the mashed banana. After 1-2 minutes, add cinnamon, nutmeg, and vanilla. Let simmer for ~5-6 minutes or until oats reach desired thickness. Pour finished oats in bowl, top with the other half of the mashed banana, walnuts, and dried fruit. I typically add another sprinkle of cinnamon as well. Bon Appetit!
