Growing up, I was always a big fan of egg salad, macaroni salad, and potato salad. They were each so rich and creamy! However, as I got older and more calorie conscious, I developed an aversion to all “salads” of the mayo-based type. Since there are alternative ways to make these salads, I felt using mayo was just not necessary. That being said, now that I’ve abandoned my eating disordered ways, I accept most foods in moderation.
I wanted to share my almost eggless, egg salad recipe because it is so close to the real thing, I can’t even begin to describe how much I loved this. Tofu was the perfect stand in for egg and while I still used mayonnaise, I added a few other ingredients to contribute flavor and nutrition, while using less mayo. Just another way to reap the benefits of turmeric!! Oh! and did I mention that soy isoflavones (found in soy products like tofu) may block sex hormones from stimulating cancer cells? There’s a reason why Asian women, who have consumed soy from a young age, have a much less risk of breast cancer!!
Almost Eggless, Egg Salad
- 7 oz soft, organic tofu
- 2 T Olive oil Mayonnaise
- 1/2 tsp Turmeric
- 2-4 T onion, depending on your preference
- 1/4 cup diced or grated carrot
- 1-2 T diced green onion
- 1-2 tsp prepared mustard
- 1-2 T freshly chopped parsley
- dash of garlic powder
- salt and pepper, to taste
Combine all ingredients, chill, and enjoy!

I’ve always wanted to try olive oil mayo. Regular mayo is hell on my digestive system, so I had to stop eating it!
I love a classic egg salad wrap, but lately the thought of mayo just gags me. That tofu version looks pretty tastey and would work well with yogurt!

I agree: i’m a huge fan of “salads” such as these. But using soy and mayo instead of the ubiquitous egg and mayo is definitely a nice substitution, not to mention healthier

I made egg salad yesterday (with actual eggs) but used plain yogurt in place of the mayo. Couldn’t tell the difference at all.
I have made one very similar and love adding the turmeric to it. Makes look even more like real eggs. I have not tried a vegan mayo, but that’d make it totally egg free!

I often use tofu as a meat replacement but I love the idea of using it as a twist on eggs. This would be a great recipe with or without the real thing I think!
I’ve heard that tofu makes a really great egg substitute, I’ll have to try it sometime. It looks good! I love all the creamy salads, too. Mayo makes everything better, lol.

That’s a very interesting recipe. I would never think to sub tofu for eggs. It does look good though. Potato salad is my favorite though. I can’t wait to have some this weekend!
