Happy Wednesday! It’s a great feeling to be halfway through the week, although I do have Friday off so technically I’m almost done!! (Not to rub it in or anything)
Just another disclaimer: My website has been driving me nuts! The pictures are coming out off centered, weird text is appearing out of nowhere, sometimes the comment section comes up, sometimes it doesn’t. Just being crazy. I have noticed that hitting refresh several times makes it “normal” again so please try this while I try to contact WordPress and figure out what the heck is going on!! Anyone else ever have this problem? If so, please help!
In other news…I baked again last night. I caved because I was reading one of my favorite baking blogs: Anecdotes and Apples. Monet comes up with some awesome recipes! She even wants to open her own bakery someday! I encourage you to check out her blog for some great inspiration!

I can’t express enough how much I love chocolate covered pretzels; nothing beats a sweet and salty combo! When I discovered a chocolate chip cookie recipe that included chocolate AND pretzels…I had to bake them!
I have to admit that I am not a very good baker. It seems I will follow a recipe completely and even if I make ZERO changes (as in…make them healthier), I still feel like it’s hit or miss! Sometimes they come out fantastic, other times I am disappointed. What gives? I followed this recipe exactly (butter and all) and they were a little flat and not as dense as I would have liked. They were still really tasty but they did not LOOK as good as Monet’s. Brandon LOVED them and scarfed 2 big cookies with a glass of milk. Maybe I’m too particular and critical of myself or maybe it has something to do with using margarine instead of stick butter? Or maybe I didn’t foam the eggs in the batter enough? Any thoughts Monet?
Regardless, I suggest you grab this recipe from Monet before she stops giving out her secrets!! It’s a unique twist on a classic cookie.

I do have to say, there is something to be said about using real butter vs. margarine. I didn’t understand it really (my mom always used margarine), but I think the texture comes out a bit better?
Nonetheless, those look delicious to me! I love the sweet and salty in my cookies/dessert as well!
