It’s been awhile since I’ve posted strictly to provide a recipe. I sincerely apologize but summer is absolutely crazy busy so cooking new recipes kind of goes out the window. We’ve mainly been sticking to our favorite staples: Lighened Up Fettuccine Alfredo, Paella, Veggie Burgers, Pancakes, etc.
Well. Today is the day I’m bringing a recipe that I have discovered is the answer to your PMS prayers: Triple Chocolate Chunk Brownies! Can we say: “Magically Delicious???” Yes, that’s right. They are, without a doubt, the BEST brownies I’ve ever made and they kick boxed brownies out of the water! SO easy to prepare!! Now, why did I decide to make these brownies and post them in the middle of the Your BEST self program? Perhaps it’s because no matter what, moderation is KEY and I think these could quite possibly make your millennium!
We are headed to a family reunion this afternoon and I needed to bring a dish. I racked my brain because Brandon did NOT want me to bring something “healthy.” I’ve had this Triple Chocolate Chunk Brownie recipe lurking for about a month now and figured this would be the perfect opportunity to make them! Sample a few and then pass them out to friends and family!! Why not?
My mouth literally screamed: “WOW-sa!!” Just an extraordinary recipe!! Seriously. Just make them. You will not regret it and your friends and family will thank you! You will be the talk of the party!!
Trying to watch your waistline? Who isn’t?? Trust me. You can enjoy one..I promise it won’t leave a lasting impression. Just practice what we’ve been learning!! NATURAL EATING, LOVE YOURSELF, and MOVE IT!! You can still lose it!!

Triple Chocolate Chunk Brownies!
- 7 oz semi-sweet chocolate chips (I used Ghiradelli chips)
- 1 stick of unsalted butter (yea…I know.)
- 3 T Cocoa Powder (I used Hershey’s cocoa)
- 3 large eggs
- 1 1/4 cups Sugar
- 2 tsp vanilla extract
- 1/2 tsp salt
- 1 cup A.P. Flour
- 3/4 cup chocolate chunks (I used Hershey’s Chunk’s)
- Cream cheese frosting (homemade OR from a canister)
- Preheat oven to 350 degrees. Spray an 8 x 8 ” dish with cooking spray, set aside.
- Melt chocolate and butter together, stir until smooth and then add 3 T cocoa powder. Mix well. Set aside.
- In a medium bowl, combine sugar, vanilla, and salt, and then whisk in eggs. Once mixed, add the delicious chocolate mix until incorporated!
- Then add flour, mixing until JUST combined. DO NOT OVER MIX!! Then sample. Yes. Just do it. MMMmmMMM!
- Stir in Chocolate Chunks!
- Pour into pan and bake ~35 minutes or until toothpick comes out clean.
- Let cool and frost with cream cheese frosting (if desired)
Mine were more fudgy because I did not let them bake all the way through.
Nutritional Profile: Moderate and don’t worry about it! All natural ingredients anyway right?

I love fudginess in brownies and these look sooo fudgy. Wonderful!
And I love that you decided to post this when you did. We can’t avoid certain foods 100% of the time so it’s a good idea to start practicing moderation while you’re on the way to being healthy, not after you’ve gotten healthy and think everything’s off-limits.

I truly could have used those this past PMS cycle! Funny that your husband didn’t want you to bring something healthy! I like to bring a healthy side that way I KNOW there will be SOMETHING I will want to eat. The dessert table RARELY is a problem

Brownies are my sweet tooth sin. I love love love them. They must be fudgy though and it certainly sounds like these are. I’m bookmarking this recipe. That way I can do like you did (and like I always do) and break it out when I need to make something to be shared. Moderation certainly is key, but having other people help eat them certainly helps it along.
