Mexican dishes are one of my favorite types of foods. I love all the different combinations and ways to use a tortilla. The only downside to Mexican cuisine is that it is typically high in fat and calories! So when I got a craving for Mexican last night, I went searching for a recipe online because we were both trying to keep it healthy this weekend. I settled on The Pioneer Woman’s Beef and Bean Burritos because she said they were quick and easy!! Another perfect combination!
These were HUGE winner’s in my book. I adore refried beans, so I picked up the vegetarian, non-fat variety, and then grabbed some Laura’s lean ground beef. I also happened to have olives, green onions, and an avocado already on hand!
I grabbed these tortillas because I wanted white flour tortillas:

100 calories and 8 grams of fiber in a white tortilla wrap? Seems like a good alternative to the other varieties. SO while we are still getting a more authentic tasting burrito (using a white vs whole wheat variety), there are some nutritional advantages to this brand!! Bonus? They were ON SALE!!!
These were really easy to make since all you really have to do is brown some meat and cut up the add ins. Then you just pop the suckers in the microwave and heat to your liking! The best part?? Leftovers for another day! I can’t wait to eat another one for lunch!!!!!
So without further Adieu……….the recipe.
Cheesy Beef and Bean Burritos
Makes 5-6 Burritos
- 1 lb Lean Ground Beef
- 1 small yellow onion, finely chopped
- 2 garlic cloves, minced
- 1 (10 oz) can of enchilada sauce
- 1 (15 oz) can fat-free, vegetarian refried beans
- Cumin, oregano, salt, and pepper, chili powder—> flavor as you like!
- ~1/3 cup shredded cheddar cheese (I never use reduced fat cheeses but you can if you like!)
- 1/2 cup chopped olives
- 2-3 diced green onions
- 5-6 Flour Tortillas
- Cilantro for garnish. (I forgot this step!! Doh!)
Brown the meat and onions, drain the fat and add minced garlic (stir ~1-2 minutes). Add spices to your preference and half the can of enchilada sauce and let simmer. Meanwhile, pour refried beans in a pan and stir in ~2-4 T of cheddar cheese. Let simmer until heated through and cheese is melted.
Prepare tortillas: add 1/4 cup of refried beans, 1/4 cup of ground meat, olives, green onions, and a little more cheddar if desired. Wrap up and drizzle with leftover enchilada sauce and sprinkle with a little more cheese. Heat in microwave ~30 seconds. Garnish with cilantro!
Top with guacamole, salsa, and sour cream!! And don’t forget to wear your sombrero! OLE’!!!!!!!!!!!

I love lighter versions of mexican foods…they retain a lot of flavor and are still really satisfying, even though they are lighter. Some foods don’t translate to “healthier” versions that well. I’m thinking I need a burrito full of beans and peppers today!

I love Mexican food too…and burritos are some of my favorite meals! It is great to be able to make your own at home. You can control portion size and fat content (those burritos at Chipotle can be caloric nightmares!) And I agree with Megan…I’m all about the guacamole!
