Mango-Avocado Salsa

The mango is a fruit I never thought I would like. Way back when (perhaps 9th or 10th grade), I asked my mom to buy me a mango because I was curious about this strange fruit. I had read that it was healthy; high in iron and antioxidants, may aid in digestion, is low in carbohydrates, and is rich in vitamins A, C, and selenium, so I knew I wanted this fruit to be a part of my diet!

 First and foremost, I had NO idea how to actually eat or pick out a mango, so I got one that looked colorful and hard. I tried biting it like an apple but because it was SO hard, I sliced off some wedges and started eating; skin and all. To my disappointment, the mango was AWFUL! It was hard and the skin tasted gross. I was scarred from mangos for life. Or so I thought.

As I got older, I started sampling other people’s mango creations and mango salsas became a favorite! I was floored. This mango that I found so repulsive years ago was actually super juicy and chock full of flavor!! Oh and there was no skin! Come to find out…most people don’t eat the skin!

Yesterday evening I found a recipe in Taste of Home magazine for a mango-avocado salsa that looked so delicious! I could not wait to try it!

This time around, I wised up. I read up about the proper way to pick a mango; heavy for its’ size, no brown or soft spots, and it should have some give when pressed.

I also googled how to slice a mango. They made it look so simple. “Cut the mango in half (avoiding the “rock” in the middle), slice in to cubes, and spoon out insides.”

Ok. Perhaps the rock in my mango was on steroids, but it literally engulfed a huge portion of the inner mango and I was forced to cut chunks around the “rock” center. This is what my mess looked like. At least it still tasted good!

I love all the colors in this dip and how it is SO easy to prepare! It will also pair well with most meats (in my opinion)! What did I use my salsa for?

Since we didn’t feel like spending a small fortune on salmon fillets, we opted for the canned variety and made salmon patties!

Mighty, mighty tasty, if I do say so myself! Hope you will give this one a try! I know it’ll be a winner!

Fresh Mango-Avocado Salsa (adapted from Taste of Home Magazine)

Makes ~6 servings

  • 1 medium mango (peeled and cubed)
  • 1/4 c. red onion
  • 1/2 c. avocado
  • 1 T fresh cilantro
  • 2 T jalapenos, seeded (optional, I omitted)
  • 1 tsp olive oil
  • 1 tsp lemon juice
  • 1 tsp honey

Combine all ingredients and enjoy!

Nutritional Profile (per 2-3 T): 55 calories,  3.1 g fat (0.4 g sat), 0 mg cholesterol, 7.6 g carbohydrate, 1.6 g Fiber, 0.5 g protein, 5.1 g sugars
