Sunday the guys went golfing, so my mom and I prepped for a cookout with the grandparents. We had free range chicken breasts, Italian sausages, sautéed green peppers/onions, homemade pasta salad, corn on the cob, and freshly baked Italian bread. As the finale closer, I baked a lemon-cornmeal pound cake that I found on the Cooking Light website and served it with fresh berries and homemade whipped cream (so much better than Cool Whip!).
The cake was a huge hit! I was really impressed by the moist texture of the lemony crumb and slight crunch of the outer crust. I’m not usually a pound or angel food cake lover, but this was dynamite! Slightly healthier than a piece of pie, it was the perfect ending to a jam packed weekend!
Hope you will all give this recipe a try. As the summer is winding down, this is one recipe that will let the season linger a little longer…
