“Hold on to your butts.” Jurassic Park…anyone? anyone?
Okay, hold on to your butts, because I’m about to reveal a delicious twist on a breakfast favorite. Yesterday, I ran across an amazing recipe for Blueberry-Cornmeal Pancakes thanks to Brian from A Thought for Food. I was simply intrigued to try it, not for it’s health value, but because after making Cooking Light’s Lemon-Cornmeal Pound Cake with Berries and Cream, I knew cornmeal recipes were a winner in my book! The texture had a crisp outer crunch and soft fluffy middle!! So fantastically flawless and over-flowing with blueberries! Although I did not try to alter the recipe to make it healthier, next time, I might try to use less cornmeal and incorporate whole wheat flour. We’ll see!!
True to Jessica from How Sweet It Is form, a sprinkling of bacon crumbles was also in order. I had never tried this “method” of eating pancakes before but WOW-za! My mouth was happy. I could not help but go back for seconds and add a few more bacon crumbles!

Blueberry-Bacon Crumble Pancakes discovered on Smith Bites!! Bon Appetite, September 2010 RSVP Section
Makes 4-6 servings
- 1 1/2 cups medium grind cornmeal
- 3/4 cup all-purpose flour
- 1/4 cup sugar
- 1 T baking powder
- 1 tsp baking soda
- 1 tsp kosher salt
- 2 cups buttermilk OR 2 cups 1 % milk with 2 T white vinegar added
- 2 large eggs
- 1/4 cup canola oil
- 1 cup blueberries
- 2-3 slices of bacon, cooked and crumbled.
- Agave syrup
Directions:
Combine cornmeal –>baking soda and whisk in large bowl.
Combine buttermilk—>oil and whisk in small bowl.
Add wet ingredients in to dry ingredients and let sit for 20 minutes. I gently stirred the batter a few times.
Heat skillet, spray with cooking spray, and use a 1/4 cup measure to scoop batter onto hot skillet. Add blueberries. Flip when center of pancake starts to bubble. This is a skill people.
Sprinkle with prepared bacon crumbles and drizzle with agave syrup.
Nutritional Profile: 118 calories, 4.3 g fat, 0.6 sat, 25 mg cholesterol, 303 mg sodium, 87 mg potassium, 17.3 g carb, 1.1 g Fiber, 5 g sugar, 3.0 g protein

oddly enough, i’ve never made pancakes before! (haha…i know, i must be crazy!) i’d probably throw some chocolate chips on mine, but you can’t go wrong with blueberries either
Chocolate chip pancakes.. the best. Even if you kind of mess up on the pancake recipe the chocolate chips will make it taste awesome.. usually. Blueberry pancakes are pretty good too though.
I love cornmeal pancakes! make them all the time! I like crepes I think more than the standard “american” hotcake, I guess having a Belgian father will do that to ya.
I like my pancakes any way…I just love pancakes

i giggled like a teenage boy at the thought of people actually holding on to their butts. i am so mature!
corn cakes are best! i like adding a bit of honey to the batter to sweeten it up and topping with fruit and yogurt.

pancakes are so good no matter how you make them! i like using spelt flour for a soft, fluffy texture.

Blueberries are so so delicious. I eat them every morning in my oats, and I love putting them in breads or muffins or pancakes!! I am not a bacon fan, but I would love to top these with some fresh banana or apple!

Pancakes topped with sprinkles of bacon? Sounds just about perfect to me! And I imagine that the plumpness of the blueberries pairs wonderfully with the crispy and salty meat. Great recipe! I hope you have a lovely weekend!

I love blueberry pancakes. The idea of using cornmeal sounds intriguing. I haven’t made a breakfast like this in some time. I don’t know why because I just love savory breakfasts once in a while.

I’m ALWAYS looking for new ways to eat bacon…this sounds like such a great idea! I also heart blueberry EVERYTHING…especially pancakes and muffins…Bacon makes everything better, doesn’t it?
Ha! My Dad still uses that quote from Jurassic Park. The other one he likes to say a lot is “Clever Girl!” (one of the guys with a gun says that and for some reason my family thinks it is hilarious how he says it).
I love having sweet + savory for breakfast, and putting the bacon IN the pancakes is pure genius. I usually take a bite of pancake + a bit of egg + a bit of bacon or sausage for the best BITE. Yum.

Once when I went to breakfast with a friend, she ordered the cornbread pancakes. I liked her meal better than mine that day…. soooo good! I’m a sucker for cornbread, so that’s probably why.
