Pumpkin Cookie Oatmeal

Anyway, I have a lot of catching up to do in the working world; send out multiple emails, answer reader questions, write posts for a few other bloggers, and then there is of course my REAL job. SO, with that said, today I will bring you a delightful morning treat: Pumpkin Cookie Oatmeal. The inspiration for this particular bowl came from the recipe I used for pumpkin oatmeal cookies.

Naturally, I loved this recipe SO much that I took the components that made up the cookies and turned it in to a bowl of oatmeal. Spot on!! I loved how the white chocolate morsels slowly melted in to the deep obiss of whole grain goodness. Sheer magic. The shredded bits of dried cherries add an insanely pleasing blast of sweetness! You cannot go wrong with this bowl of pumpkin cookie oatmeal!

Pumpkin Cookie Oatmeal

Serves 1

  • 1/2 cup Old Fashioned Oats
  • 1/2 cup milk
  • 1/2 cup water
  • Cinnamon and pumpkin pie spice…until you get it right!
  • 1/3 cup pure pureed pumpkin
  • 1 small mashed banana
  •  a few white chocolate chip morsels
  • drizzle of 100% pure organic maple syrup (to taste)
  • 1-2 T dried cherries, diced in to little bits

Directions:

Add milk and water into saucepan and when begins to boil, toss in the oats. Stir and reduce heat to a simmer. Add spices, 1/2 mashed banana, 1/2 the cherry bits, and pumpkin puree. Allow to simmer for 5-7 minutes or until it reaches your desired consistency. Drizzle in a teaspoon or so of some pure maple syrup, stir, and pour in to bowl. Top oats with other half of mashed banana, cherry bites, white chocolate chips, and another teensy drizzle of maple syrup!

Nutritional Profile: ~420 calories, 7.2 g fat (3.7 g sat), 14 g Fiber, 12 g protein
