I decided to kick off the week with a short, simple post. Welcome back work week…

This lady is my wonderful Grandma who is about to be 90!! Guess where we are taking her to celebrate? That's right, no better place to ring in your 90th year than LAS VEGAS!! (I kid you not!)

Chocolate and Peanut Butter: There is no better combination! I let this cake sit in the crock pot for 2 1/2 hours last night and the result? Warm, gooey, peanut buttery fudge cake. I bet you are jealous...
Chocolate Peanut Butter Pudding Cake from Not Your Mother’s Slow Cooker Cookbook
- 1 cup all purpose flour
- 2 T unsweetened cocoa powder
- 1/2 cup sugar
- 1 1/2 tsp baking powder
- pinch of salt
- 1/2 cup milk (they suggest WHOLE but I used 1%)
- 2 T canola, walnut, or peanut oil
- 1 T vanilla extract
- 1/2 cup smooth or chunky peanut butter (I used natural)
- 1/2 cup semi-sweet chocolate chips or chunks
Topping:
- 3 T unsweetened cocoa powder
- 3/4 cup sugar
- 1 1/2 cup boiling water
Directions:
Spray slow cooker with cooker spray.
In a medium bowl, combine flour, cocoa, sugar, baking powder, and salt. Whisk together and make a well in the center. Add milk, oil, and vanilla, stirring together until well blended. The batter will be smooth but thick. Stir in the peanut butter, heat in microwave if hard from refrigerator. The batter will be thick. Stir in chocolate chunks. Spread evenly into bottom of slow cooker.
For the topping: combine cocoa and sugar in a separate bowl, pour boiling water on top and whisk until smooth. Will be watery but the sugars will be dissolved. Gentley pour over the batter in the cooker. Do not stir. Cover and cook on HIGH until puffed and top layer is set, ~2 1/2 hours. Turn off cooker and let sit for 30 minutes before serving.
When serving, cut out slices from the cake and drizzle the fudge sauce from the bottom over the top. This is the best part!! You may feel enticed to lick the spoon…DO IT!
This dish is fantastic for potlucks! Serve with vanilla ice cream if desired. I preferred it without!

My nonna (the one who just turned 87) LOVES Las Vegas! She was pretty excited to go last year when my sister got married there (because it had been a while since she had been).
She gets really excited about going to the casino in town too (Caesars Windsor). She loves playing the video poker machines. She can sit there for hours and just play with $20.
Sara Lee made a mint brownie in a crock pot, but I think I would be more up for the PB version. Holy creaminess! MMMM
Best thing I ate this past weekend was so not healthy or original but I had been craving it for awhile. Fried chicken and biscuits. The biscuits actually being the best part. Making pumpkin and chocolate chip muffins for Halloween this weekend.

I ate them on Sunday, the day before I started my elimination diet. I knew I had to go an entire week without PB and chocolate, so I took advantage. They were AMAZING

This is such a crazy coincidence–Hot Fudge Pudding Cake was one of my favorite childhood desserts growing up (my mom’s version doesn’t have peanut butter in it–but I’m sure that could only make it better!). Last week we were talking about recipes we missed, and I mentioned that one. She made it yesterday for our weekly Sunday family lunch! It was super tasty of course!
