I don’t have a lot of time today but I wanted to bring you a delicious recipe that is a Mediterranean classic: THE Fattousch Salad! I first tried this salad back in college. There was a tiny little carry out close to my apartment called South Side Six. It literally looked like a run down gas station (minus the pumps). But sometimes there are little gems hidden inside ugly stones and this tiny little place carries the best fattousch salad I’ve ever had.
After graduating from college, I came to forget about the fattousch. My senses forgot how amazing it is! That is until a bowl of homemade fattousch appeared at our Christmas party last week! I definitely filled my plate to the brim and was inspired to make some for myself at home! I didn’t get enough! Please give this salad a try! It’s a keeper and a crowd pleaser!!
Fattousch Salad
- 2 cups of romaine or 8 large leaves
- 1 large cucumber
- 2-3 medium tomatoes, chopped
- 1 large carrot, shredded in food processor
- 1/2 cup flat-leaf parsley leaves, no stems
- 1/4 cup fresh mint leaves, no stems
- 1 green pepper, diced
- 1 bunch of green onions, diced
- 1/2 tsp ground sumac (found at Middle Eastern Stores)
- 2 pieces of whole wheat pita bread, toasted at 375 degrees for 5-10 minutes (until crisp): crumbled
Dressing:
- 1/2 cup lemon juice
- 1/2 cup olive oil
- 2-4 garlic cloves
- 1 tsp salt
- pinch of pepper
Directions: Put all salad ingredients in to a bowl. Whisk dressing ingredients together and pour ~1/2 cup of dressing over salad. Serve immediately!

The fattosh is AWESOME! I love South Side Six and I do order the fattosh at least once a month, I wish I could eat one everyday! I swear I have mastered the fattosh at my house and the recipe is very similar to yours….I also add lemon salt (found at middle eastern store), gives it a little more of a pop!
The sumac really makes it and no one ever knows about that “secret” ingredient! YUM!

Yummm! Yes indeed I have experienced Fattoush. When I lived in the Middle East, I ate a reasonable amount of it, as well as tabbouleh. Now living back in Canada, I wish I’d eaten SO much more!!

Fattoush is really best with deep fried pita chips in it, but that of course is a bit tedious for the home cook. I like to smear my pita with a mix of za’atar and olive oil before toasting it.
I don’t usually put carrots or parsley in mine.
Looks like a tasty Greek salad to me…I didn’t know that was the name, but I’m pretty sure I’ve had variations of it. I’m craving a good salad righ tnow and it’s only 759a…hmm..weird.
