I’ve been slacking in the recipe department as of late, so this weekend I made TWO new recipes to share this week. The only problem is that each recipe FLOPPED in their own way. Don’t ya hate when that happens?
Recipe #1: Avocado Chocolate Pudding

Not my picture again, I struggle making pudding look pretty. I think this one does a pretty good job.
This recipe flopped, not because of the taste, but because of the nutritional profile. It was actually a sinfully delicious pudding! I am typically NOT a pudding lover because anything I have ever had (store-bought) is made with crap ingredients. I felt compelled to make this recipe though because the ingredients were simple; avocado, unsweetened cocoa, agave, pure maple syrup, and water. The dilemma; extremely high in calories for just 2 tablespoons. I don’t know why I didn’t think to do the nutrition facts BEFORE making a whole batch but I figure some tweaking needs to be done before I can go sharing this pudding recipe!! Who eats 2 tablespoons of pudding?
Recipe #2: Vegan “Cream” of Mushroom Soup
Let me just preface by saying I’m not a fan of soup, so when I saw the recipe and pictures for this soup on Joy the Baker’s website, I should have gone with my instinct and not attempted to make it. But it looks and sounds so good no?
Either way, I got all the ingredients with well intentions. However, even though the flavors were spot on, I could not get past the texture OR color of this dish. I stupidly omitted the step about using a mesh strainer, so there was an unappealing chunk. The weird chunky texture, blended with the brown color, did nothing for my senses. I could literally finish only a few bites. Brandon manned up and ate the whole bowl but literally vomited 30 minutes later. Granted, I don’t THINK it was because of the soup, but you just never know.
SO this Monday morning I have NO recipe and no new blog topic; just a couple recipe flops. Perhaps tomorrow I will come up with something better to write about! Until then! Happy Monday!
Question: Are there any foods you just don’t like? DO share!

I think a recipe flop is a good topic because we all have them. I’m wondering how the calories could have been lowered in the pudding recipe without thinning it too much. Maybe applesauce? Hmn. Foods I don’t like broccoli rabe, cloves- I think those are the only two. I don’t eat wheat or a lot of dairy but that isn’t because I don’t like them, they don’t like me!
I hate when I think something is so healthy and then realize it is super calorie dense! Such a bummer because that pudding looks delicious!
Aww, Brandon definitely took one for the team! Haha…I love *almost* all soups EXCEPT mushroom, so I completely understand why you found it unappealing. The avocado pudding, on the other hand, sounds wonderful. But yes, very indulgent…However I think I could rationalize eating more than two tablespoons by telling myself that I was consuming HEALTHY fats. :-p
I can’t stand dried apricots! They make me feel extremely nauseous!
Aw bummer to hear about your flops but hey-sometimes recipe flops end up being the best things ever!! Anyway, I’m super glad that I found your blog and I’m really excited to read more already!! Haha seriously, i love it!
XOXO
I love avo-pudding but I do agree with the crazy calorie count!
That stinks about the soup-I hate flops, esp when you have high expectations!
Who eats two tablespoons of anything?! Haha! I would probably eat the whole thing
dang, sorry to hear about the recipes. (especially the pudding.:( ) foods i seriously do not like are bacon and beets. bacon because fat and salt alone do not constitute actual FOOD (imho.
) and beets because the smell is just plain wrong.
I really like most foods… But probably anything with wasabi I’d try and avoid. I can’t handle the stuff at all!
I always wondered about the tofu or avocado puddings..that they must be higher in calories than the regular, sugar free stuff. But yeah, definitely couldn’t eat just 2 T!
I’ve seen versions of that chocolate pudding and have been tempted to try it — but I’m not a big dessert eater so I haven’t taken the time yet. Makes sense that the calorie content would be high so I think I’ll pass on that one. Thanks for the heads-up on this. Like you, I would have made it without thinking because the ingredient list is good. Oh well. Avocado are for eating plain anyway
That chocolate pudding looks so good and there is no way that I would only eat 2 tablespoons!
I can’t think of any foods that I don’t like. I don’t eat red meat but not because I don’t like it.
awwww nooo! It makes me sad that the soup made you sick! my bff and I were just talking about how picky we are and how after one bit of something gross, we get super nauseous. sorry these didn’t work out!
DANG i hate when little amounts are so high cal (hello peanut butter!).. oh well.. at least its tasty!
I love avocado chocolate pudding! Wonder what made it so high cal? Avocados are necessarily low cal, but it’s from the good fat. Next tie you’ll get it
Sorry you made a flop with the soup. Can’t believe Brandon chucked it. Eek!
Oh no, sorry to hear Brandon hurled after eating the soup. That one WON’T be going back in the rotation for sure!!! Don’t fret, we ALL have recipe fails (I just had one last week, made cupcakes for my Mom’s birthday and the healthy ICING was more like soup! VERY runny, and so not pretty) And something I don’t like? The taste of lemongrass. Blech. Have a great day Erin!!!!!
Bummer! The pudding sounds awesome…but based on the ingredient list, I can see where it would be high in calories. Maybe mixing in some Greek yogurt or something to bulk it up?? Just a thought!
Aww, recipe flops happen to the best of us! I made pumpkin soup one time that was so bad that Christopher and I still won’t eat pumpkin soup to this day, haha!
I am sorry that both your recipes didn’t turn out as you had expected. That pudding does look quite delicious!! I have had many flops in the kitchen if it makes you feel any better.
As for foods I don’t like, I would have to say olives are up there.
I’ve heard amazing things about the avocado pudding, but I agree-it’s so high in calories! I dislike when recipes flop, but once you get something you like, it’s worth it!
I have seen a few recipes for chocolate pudding using avocados, but maybe I will hold off in trying it – I never thought about the calories – it’s something I could probably eat entirely in one sitting
I really destest radishes and custard (I just can’t get past the texture of it).
I’m not a big fan of Pickles.
Though your Avocado Chocolate Pudding looks DIVINE!
xoxox
Kathleen
We all have days like that!!
I HATE olives! and Parmesan. =P
Aw what a bummer! I don’t like fennel or olives. They both make me sick to my stomach
olives. yuck!
hehe this made me laugh! i have had several recipe flops in the past, so don’t worry, you are not alone! i agree with you on the avocado pudding – yes avocados are nutritious but that’s a lot of calories to be spending on something so small! avocados are one of those foods i kind of like, and i wish i liked a lot because of the healthy fats.. but i’d rather not eat them because i don’t really enjoy the taste!!
Wow I have not thought about putting chocolate and avocados together. It looks really good though. I just happen to have some avocados so I might just give this a try today! Thanks for the recipe.
We are still loving your vegan chili!!! I just published it our nursing program’s newsletter.
Thank you,
Diane
