Since I HAD to use up these….
and since I REALLY wanted to make these Apple Cinnamon Baked Donuts
AND this Low-Fat Banana Nut Bread
AND was DROOLING over these Banana Crumb Muffins (thanks Leah!!)
I decided to compromise.
Baked Banana Nut Bread Donuts with Crumb Topping were born….and devoured.
Baked Banana Nut Bread Donuts with Crumb Topping
Makes 12 donuts.
1 1/4 c. All-Purpose Flour
1/2 c. packed brown sugar
1/2 tsp salt
1/2 tsp baking soda
1/4 tsp baking powder
1/2 tsp cinnamon
3 tsp canola oil
1 large egg, beaten
2 medium egg whites, beaten
4 medium overripe bananas
1 c. uncooked Old Fashioned Oats
1/3 c. chopped walnuts
Crumb Topping (Optional…but SO worth it!)
- 1/3 cup packed brown sugar
- 2 T flour
- 1/8 tsp cinnamon
- 1 T butter
Preheat the oven 350 degrees and spray 1 donut pan with cooking spray. Combine all dry ingredients including the oats and cinnamon. Mash bananas in a separate bowl, adding the oil and 1 whole egg. Mix thoroughly. Add the wet ingredients into the dry flour mixture. Mix well, forms a thick batter. With a hand mixer, beat the egg whites until medium stiff peaks form. Fold the whites into the batter in three separate additions. Fold in chopped walnuts last. Pour into prepared donut pan (~1/4 c. of batter). Now, make the topping. Combine the sugar, flour, and cinnamon in a small bowl. Cut in cold butter until a crumbly consistency is formed. Sprinkle generously over the top of each donut. Bake 10-12 minutes. Allow to cool 5 minutes and then flip out onto a wire rack.
Nutritional Profile (this IS a dessert): 260 calories, 8.2 g fat, 1.6 g sat. fat, 49 g carbohydrate, 2.8 g Fiber, 26 g sugars, 6.1 g protein

i love a crumb topping – my fave dessert is apple crisp, not so much for the apples, but for the crumble top! i would love to try to recreate a chocolate oatmeal square that is sold near me: a shortbready type base, chocolate middle and crumb topping. some day i will give it a shot!

The donuts are so cute! I want a donut pan (even though I don’t really eat donuts much!) Right now, I’m in the mood for the Fruity Quinoa and Amaranth salad that I made on the weekend (http://eatspinrunrepeat.wordpress.com/2011/05/30/the-good-and-the-bad/). I’ve taken it for lunch every day this week but I’m still LOVING it!
