Ask my husband; I am a salad FIEND! I eat one to two big salads a day and they are always loaded with a delicious assortment of vegetables. This time of year, I also like to include fresh fruits!!
Since strawberries are in the prime of their season there is no better addition to a bed of greens! Lately my favorite combination has been spinach, beet leaves, strawberries, carrot, celery, tomato, chia seeds, and some slivered almonds, drizzled with a few teaspoons of my homemade balsamic vinaigrette! The dressing has an incredibly fresh aroma and when drizzled over a fruity salad, it will also WOW your tastebuds!! Stay cool and healthy this summer my friends! Enjoy!!
Agave-Mustard Vinaigrette
Makes 1/2 cup (~ 8, 1 T servings)
- 2 tablespoons balsamic vinegar
- 2 T apple cider vinegar
- 1 tsp dijon mustard
- 2 T agave nectar
- 2-3 cloves of freshly minced garlic
- 2 T olive oil
- couple grinds of salt and pepper, to taste
Directions:
Combine all ingredients in a bowl and whisk thoroughly.

Beautiful salad! We eat salad everyday (happy to say it’s my son’s favorite food) and this dressing sounds terrific. I like your use of agave nectar. I’ve been cutting down on sugar and trying other forms of sweetening, so will definitely try this dressing.

I always try to make homemade dressing and find I am AWFUL at it! The best one I have come up with invloves plopping a tablespoon of hummus onto my salad. lol This one sound so tasty though. I LOVE dijon mustard, so this is perfect for me!!
I love the dressing recipe! We make a dressing with olive oil + balsamic vinegar + dijon mustard + shallots but I haven’t tried adding agave, garlic and apple cider vinegar. Sounds delicious

My favorite homemade dressing has only two ingredients, but it’s amazing. It does depend on two products in particular, though. First, Honey Ridge Farm Honey Balsamic Vinegar, and this bottle of orange & saffron-flavored Spanish extra virgin olive oil I picked up at Central Market. OH MY GOSH. The combination is amazing!

I am never good at making dressings prob bc I dont eat very many (if any at all) salads. I do make a mean honey peanut sauce that is to die!
This dressing looks great (could also be a good marinade). I am simple love olive oil, lemon juice, salt and pepper. I also use fresh herbs basil/cilantrol chopped up in my salad. I’m a salad fiend too.

I only like salads when I have no appetite or when it’s really hot. Not much of a salad fiend like you, but that agave-mustard vinaigrette sounds awesome, esp with fresh summer fruits.

I think I stole my go-to dressing from Daily Garnish but it’s nutritional yeast, apple cider vinegar, olive oil, and mustard. Depends on the salad. I don’t imagine I’d want it on a salad like this, but for most it’s my go-to and it’s good

I usually eat salads for lunch (and so does my fiance) so we rarely have them for dinner too, but I love super simple viniagrettes. At lunch sometimes I just use a bottled one like Annie’s.

I wish I had a homemade salad dressing to share! I’m not a big salad person. The ones I make at home just aren’t satisfying, and the nutrition stats on my restaurant salads usually lead me to just go ahead and get the steak. Yours looks great though. Perhaps I need to experiment some more and make this the summer of salads!

I don’t remember the recipe off-hand, but I made a honey basalmic dressing the other night that was pretty killer… it’s one of my favorites to order as well!
