I just had the perfect weekend. Since we didn’t have any definite plans it was easy to find time to get summer cleaning done, play tennis, go for a hike in the park, grab an ice cream, and also try out some new recipes!
Several weeks ago, Jessica from How Sweet It Is made homemade French bread pizzas that looked dynamite! I got nostalgic (and hungry) after reading her post because French bread pizzas always take me back to my childhood; giggling over silly faces and begging to help put the pizzas together are such fond memories of mine.
*sigh*
Anyway, I attempted French bread pizzas last night for a quick and easy Sunday dinner. Make no mistake about it, they were a serious husband pleaser! While we both LOVED every bite, Brandon could not get enough; he downed a WHOLE half (it was a large loaf).
If you are a crust fan like me, these French bread pizzas will surely knock your socks off! It is ALL about the crust with these guys, so make sure to pick up some quality bread!! My mouth was in heaven (or so it seemed for the 10 or so minutes it took me to eat); crispy, crunchy, FULL of flavor, and SO versatile. I encourage everyone to try these at home!! I’m sure the kids will love ‘em too! Give them a try this week!!
Multi-Grain French Bread Pizzas
Inspired from Jessica at How Sweet It Is
- 1 large Multi-grain baguette, sliced in two (right down the middle)
Preheat oven 350 degrees and bake the plain loaf halves 10 minutes. Remove from oven and add toppings of choice! I chose the following:
- 1 medium zucchini, sliced
- 1 small sweet onion, sliced in to ring halves
- 1/4 cup sun-dried tomatoes, chopped finely
- fresh mozzzarella (organic if you can find it!!)
- Pizza sauce; homemade or a store-bought variety with no artificial ingredients!!
In a medium skillet sprayed with cooking spray, add sliced zucchini and onion. Saute on medium heat and allow to carmelize (~15 minutes). About halfway through, add ~1 tsp olive oil.
On the toasted loaf halves, add pizza sauce, onion/zucchini mixture, sun-dried tomatoes, and cheese.
Bake another 10 minutes. Remove from oven. Turn oven to broil and place pizza back in the oven. Allow to broil another 1-3 minutes or until cheese is lightly browned. Remove from oven, cut bread in to wedges (or do as Brandon and eat the whole half!! I chose portion control though
)
Enjoy with a large veggie salad!

French bread pizzas remind me of my childhood too! I also used to enjoy using English muffins as a base, although the French bread crust wins by a landslide in the flavor and texture department. I wish they made GF French bread! For now I’ll just have to drool over your pictures.

Wow. These looks FAB! Oh Mah Gawd. I will need to do Daiya cheese since I cut out dairy but def should try it! I have never seen multi rain french bread though. I am sure Whole Foods has it!
