Roasted Tomato Basil Pesto. I saw this recipe on Angela’s blog earlier this week and have had it on my mind ever since. Angela is a genius in the kitchen, so I knew this recipe would be a hit, especially if you love a good pesto!
With the abundance of home grown tomatoes filling our fridge, I thought this was the perfect way to utilize them, aside from inhaling tomatoes straight up (as I tend to do ASAP when I get home from work)!
Roasted tomatoes are probably one of the best scents to fill your home; so sweet that you might feel as though you are in a candy factory!
If you are craving the flavors of fall…get your taste buds ready! We paired our pasta with a glass of red wine and some leafy romaine and dandelion greens! Superb!

Red wine just tips the scale from great to amazinggg when it comes to pasta dishes. I love it! I also do love pesto so I think this recipe is a definite win in my book!

I have yet to try roasting tomatoes. I’m not sure why it’s been last on my list of veggies to roast. I roast everything else, including broccoli! This is a must try. Thanks for the inspiration!
Mmmm. Roasted summer tomatoes. I have to say the only thing better is sun dried tomatoes in extra virgin olive oil (which I’m slightly obsessed with lately). It so fruity tasting! I need to make this!
