This morning I have a SUPER simple breakfast for you; eggs in an onion’s nest. I love this breakfast dish because what you see is what you get; eggs and onions. And when I need something to power me through the morning, this is my go-to pick! Now I know there are those who fear the egg, but FEAR NOT my friends because these little guys are HEALTHIEST in their natural form! Just check out my “Is It Healthy? I usually start by eating a big bowl of fruit or a glass of homemade juice. This morning I picked the juice; apple, carrot, and celery. You’re getting an army of antioxidants when you drink this juice, vitamins A, C, and E…just to name a few!
After about 30 minutes, I was ready for part II of my breakfast.
I chopped up 1 whole onion in thin slices (use two onions if you’re feeling up to it) and sauteed them in a mix of olive oil and butter for about 10-15 minutes. You want the onions crispy! Once you have the desired texture for the onions, place them on your plate forming a little nest. Now, crack 2 large eggs in the same skillet and let them cook just how you like them (I like my yolks a little runny). Once cooked as you wish, top each onions’ nest with an egg and sprinkle with a little freshly ground pepper if you like!
The crispy onions mop up the runny yolk beautifully. So tasty! So easy! So healthy…get cooking folks!

I tried this today! I think I need to use a higher heat because my onions weren’t crispy enough. It was super tasty though! Definitely a dish to make after you’ve already found your soulmate.
Looks yummy. I love eggs but usually only eat them on the weekends b/c I’m usually rushed in the mornings. My easy go-to breakfast is a whole grain English muffin with peanut butter and a piece of fruit.

That would be tasty! My go-to is oatmeal. Day-to-day, I go with the large flake oats, but when I have time, I make steel-cut and put it in the fridge to keep me stocked up for a few days.
I love eggs in the morning. Such a powerhouse of nutrition! I usually make an egg sandwich with hummus, whole wheat bread, mushrooms and avocado. I may make this tomorrow! Thank you for sharing, sweet girl!

honestly, it’s your basic bowl of cheerios with some bananas on top and a side of orange juice. I usually run in the mornings and if I don’t eat something nutritious, I wind up snacking all morning till lunch

My go to breakfast is actually not very ‘go to’ because my routine varies across the week and what works some days doesn’t on others…but fruit and yoghurt are pretty reliable stand bys!

LOVE this idea! I always add onions to my omelets and scrambles, but never thought to rest the eggs on top of the onions! I’ll definitely be trying this tomorrow. Yum!
I almost always eat eggs in the morning because I find they keep me full and satisfied longer than cereal, bars etc. Occasionally I’ll make coconut flour pancakes, but they take a bit more time, so I usually save them for weekends.
