Pineapple and Cottage Cheese Toast

Morning friends! We are finally moved in to our NEW! house and I couldn’t be more excited about it! I apologize for the lack of blogging last week but we just got our internet set up yesterday morning! Not like I would have gotten a lot of blogging done anyway because, as you can guess, it had been a busy week. By Sunday night we were exhausted!

I know a lot of people have been asking me to post pictures of the house, so here’s a few glimpses of what the inside looks like! I know there are only a couple photos but as more boxes get put away, more photos can be shown. ;)

Okay, so now I’d like to share one of my old favorite breakfasts. When I was trying to lose weight in high school, I found a book by Denise Austin called How to Lose Those Last 10 Pounds. It was a book that literally changed my life and made me want to pursue a career in a health field. Denise showed me how to eat balanced meals and snacks and still lose weight. The following is a breakfast that I frequently ate while following her program; pineapple and cottage cheese toast.

Although some of you may be skeptical of cottage cheese because of the high sodium content, I still think it makes an excellent protein rich addition to meals and snacks. And the best part is that most stores now carry organic versions (which is super important to me)!

Pineapple is really a no-brainer when it comes to health; super high in vitamin C and the trace mineral manganese, it’s great for helping to boost your immune system! Oh, and with a few sprinkles of cinnamon on top, you are helping to lower your LDL cholesterol and regulate your blood sugar! Sounds like an excellent morning meal or snack to me!

Pineapple and Cottage Cheese Toast

  • 2 slices of whole grain bread or English muffin
  • 1/2 c. low-fat cottage cheese (organic)
  • 1/2 c. diced, fresh pineapple
  • cinnamon

Directions:

Toast your bread, spread an ample amount of cottage cheese, press the diced pineapple in to the cottage cheese, and sprinkle with a few dashes of cinnamon. Tasty and satisfying! My kind of meal!

Nutritional profile (per 1 serving made with 1% cottage cheese and Thomas’ whole wheat English muffins): 242 calories, 2.5 g fat (0.7 g sat), 37 g carbohydrate, 4.6 g fiber, 20 g protein, 680 mg sodium, 190 mg potassium, 10 g sugars
