I’ve never really been a fan of chicken nuggets. I was NOT the kid who ordered chicken nuggets and fries in my Happy Meal, nor did my mom ever make us frozen chicken nuggets during the week nights. It just wasn’t my style. I also LOATHE the fact that chicken nuggets seem to be the answer to parents prayers when it comes to getting their kids to eat! I honestly don’t even want my future son or daughter to know what McDonald’s is (at least for a long time).
With all that being said, the above pictured chicken nuggets are pretty darn tasty. They are super easy to throw together for a quick week night meal and I guarantee that even the anti-chicken nugget eaters might find these attractive (I know I did!). I’m not saying that these chicken nuggets are okay for your little ones to eat every night if you just can’t get them to eat, but I do feel they make a healthy alternative to some of those other chicken nugget brands out there (*cough* Tyson *cough*).
I used pastured chicken, whole wheat seasoned breadcrumbs, organic ketchup, and a HUGE salad to compliment. I highly recommend making the huge salad the spotlight, of course.

Healthy Baked Chicken Nuggets
Serves 4
- 2-3 boneless, skinless chicken breasts, cut into even, bite-sized pieces.
- 2 tsp of olive oil
- 6 T whole wheat seasoned breadcrumbs
- 2 T freshly grated Parmesan cheese
- 2 T panko breadcrumbs (optional…I left them out)
- salt and pepper to taste
Directions:
Preheat oven to 425 degrees and spray a baking sheet lightly with cooking spray. Pour olive oil in one small bowl and breadcrumbs and Parmesan cheese in another small bowl. Add chicken pieces to olive oil bowl, til each piece is well coated. Then dip the pieces in the breadcrumbs until well coated. Place on baking sheet. Lightly drizzle the tops with olive oil OR more cooking spray.
Bake 8-10 minutes, flip and bake 4-5 more minutes until crispy and golden brown.
Nutritional Profile (per ~5 nuggets): 165 calories, 4.6 g fat, 22 g protein, 7.7 g carbohydrate, 0.9 g fiber, 0.1 g sugar













I love that you made a healthy version of these so people don’t feel like they have to “give up” chicken nuggets forever but instead can enjoy a healthier version of them!
