NO-BAKE Oatmeal Raisin Cookies!

At the beginning of the week, I proposed a NO ADDED SUGAR challenge for the Fall Weight-loss Challengers. I asked people to commit themselves to going THREE days this week using no added sugar; granulated sugar, brown sugar, cane sugar, maple syrup, honey, agave, and the like. It’s Friday, and I’ve personally accomplished 2 days without any added sugar!! I am pretty proud of myself because ya know what?  I love me some sugar.

It’s a problem.

Since any and all desserts make me swoon, I need to find ways to have “dessert,” that is not loaded with sugar and has at least SOME nutritional value! Last week I blogged about chocolate chip cookie dough “ice cream,” and today I am bringing you something that is just as delicious, could be added to some banana soft serve (if you felt so compelled), and contains none of the “added sugars” listed above!!! Oh and did I mention it’s EASY to whip up?

Why, hello there No-bake Oatmeal Raisin Cookies!! 

This recipe contains natural sugar in the form of Medjool dates. See below if you have no idea what I’m talking about.

Medjool dates are considered “nature’s candy.”  A single pitted Medjool date has 66 calories and almost 16 g of natural sugars. I guess you COULD call this cheating on my no added sugar challenge, BUT medjool dates DO contain lots of fiber, B vitamins, potassium, calcium, magnesium, copper, iron, manganese, phosphorus, zinc, selenium, and antioxidants (I guess if God didn’t want us to have sugar, He wouldn’t have created such fruits). :)

This is why I justified these no-bake oatmeal raisin cookies as okay on my challenge!

 

 

So let’s get down to the recipe shall we?

These cookies come together super quick, have a decemt nutritional profile, and will satisfy your cookie craving without sending you over the edge! I liked them sprinkled with a little coconut, but feel free to get creative! You could add more cinnamon, dip them in dark chocolate (if you DO want a little added sugar), add some chia seeds, swap oats for coconut flour, crumble them up in banana soft serve, or just eat them as is!

The possibilities are really endless! I love that.

NO BAKE OATMEAL RAISIN COOKIES!

makes ~9 cookies

  • 1 cup old fashioned oats
  • a couple dashes of sea salt
  • 1/2 cup raisins or other dried fruit
  • 1/2 cup pitted Medjool dates
  • 2 T natural peanut butter (or any other nut butter you so desire)
  • 1 tsp vanilla
  • 1/2- 1 tsp cinnamon
Directions:
Add oats and salt to food processor or blender and pulse until finely ground. Add the remaining ingredients (minus raisins) and process until fully combined. Slowly pulse in raisins (so they stay somewhat in tact but still well combined). While processor is spinning, slowly add 1/4 cup of filtered water until dough looks able to form. Add another 1/4 cup of filtered water if you feel the dough needs it (I did). Form into balls and press down. Dip in topping of choice! Freeze, refrigerate if you wish!
  • Nutritional Profile: 119 calories, 2.4 g fat  (0.4 g sat), 155 g potassium, 23 g carbohydrate, 2.4 g fiber, 14 g sugars, 2.4 g protein, 10% magnesium, 47% manganese, 11% phosphorus, 10% thiamin
