Who Else Wants No-Bake Granola!?

Healthy recipes for granola and granola bars are a dime a dozen. I have even shared several on my own site; like my favorite Chewy Oatmeal Peanut Butter Granola Bars Recipe.

But let me tell YOU, I have a recipe for granola that trumps many others and it is NOT A granola BAR recipe…it requires ZERO baking and comes together faster than you can say; “healthy homemade granola!” Yaaaaaaaaaaaaaaaaaaaay!

I threw this little concoction together the other night because I wanted something sweet that wouldn’t break the caloric bank; if you track calories and that sort of thing.

I started with the intention of making a homemade Lara bar; they are quite simple to make, don’t require loads of ingredients, and taste divine! An excellent, on-the-go snack.

But I didn’t want a bar. I wanted crumbly. I wanted a topping. I wanted…granola! So here is what I did. I realize this recipe is not super inventive, but sweet, salty, chewy, crunchy, and uber-scrumptious all rolled in to one!? Yoooooooooooooooou BETCHA!

Healthy Homemade NO-BAKE Granola Recipe

  • 1/4 cup raisins
  • 1/4 cup chopped dates (or you could just use more raisins)
  • 1/4 cup + 2 T Old fashioned oats
  • 1/4 cup walnuts
  • 1/4 cup pecans
  • 2 T nut butter (I use peanut)
  • 1/8 tsp salt
  • 1/4 tsp pure vanilla extract
  • Optional; chia seeds, hemp seeds, coconut, chocolate chips (I added chocolate chips)
Directions:
Add the oats to a food processor or blender and pulse lightly. Then add the rest of the ingredients and blend until well combined. Should look crumbly. Portion and press evenly into 4, 4 oz ramekins.  Place in fridge until ready to eat. Upon serving, crumble mixture and put on top of yogurt, eat with milk, or drizzle with more PB and chocolate chips for an afternoon dessert. The possibilities are endless!
I chose to add a few chocolate chips and a teensy drizzle of peanut butter.
Nutritional Profile: 241 calories, 15 g fat (1.6 g sat, 5.4 g poly, 3.9 g mono), 0 mg cholesterol, 89 mg sodium, 205 mg potassium, 25 g carbohydrate, 3.7 g fiber,  13 g natural sugars, 5 g protein, 18% copper, 8% iron, 15% magnesium, 70% manganese, 14% thiamin, 8% zinc
 “Is oatmeal gluten-free!?” The answer is no. Oatmeal contains gluten, although there are many gluten-free versions available in stores, particularly in health food stores.
