A Healthy Recipe for Brownies (that tastes good too!).

I think I’ve shared in the past my undying LOVE for brownie recipes. I legitimately feel there are SO many brownie recipes I want to sample that I could literally try a new one every day!

Of course, I have my tried and true, BEST BROWNIES EVER recipe from dear Jessica at How Sweet It Is. People. I cannot keep these in the house for more than a day or two. I would eat the whole pan myself. SO super scrumptious! Better than Betty Crocker Brownies for REEEEAL!

But, since I’m not always looking to gain 10 pounds by baking endless amounts of brownies and then shoving them in my face, I’ve started compromising. I’ve been finding healthy cookie recipes. Since I’ve had several successes making Lara bars and no-bake oatmeal raisin cookies, I thought to myself, “why not try healthy brownies again?”

You see, I’ve tried to make a healthy brownie recipe in the past and they always leave me super unsatisfied. So I said, screw it. If I’m going to eat a brownie, then I am going to eat the BEST BROWNIES EVER, when I do. But when I stumbled upon a 5 minute vegan Expresso brownie on Pinterest, my interest was peaked. I knew I had to go for it. All I had to lose were a few cups of ingredients that I paid good money for right? ;)

THANKFULLY, I didn’t waste good money. The recipe turned out fantastical. These RAW, No-Bake, added sugar-free, dairy-free, and gluten-free brownies are phenomenal. Of course, if you are looking to eat the BEST BROWNIES EVER, then this is not your recipe. It’s not your typical brownie.

However, if you are just looking to satisfy a small craving without going in to a sugar coma and getting a few nutritional benefits to boot, then THIS is the healthy brownie recipe you’ve been looking for.

Moist. Crumbly. Chocolaty. Sweet. Chewy. Rich. Brother and Husband Approved!

The only thing I didn’t like is they don’t set up very well. I was enticed by THIS picture below, but even after being in the freezer for a couple hours, they stayed together, but not that well and I didn’t think they tasted as good cold.  So I pressed them into 4 oz ramekins (to keep my portions in check!) and just ate it with a spoon, room temperature (OR you could warm it up)…I liked it best warm!

Hey, as long as the taste is there…who cares what it looks like? 

Just do it.

Make them.

I promise. 5 minutes and you will be thanking me you did!

Best Ever Healthy Brownie Recipe!

Makes ~8 brownies.

adapted from the Minimalist Baker. Vegan, Gluten-free, added Sugar-free

  • 1 cup almonds, roughly chopped.
  • 1 cup medjool dates, pitted and chopped
  • 1/4 cup + 1 T unsweetened cocoa powder or cacao powder
  • pinch of sea salt
  • 1-2 tsp ground coffee (depending on preference, you could leave them out too)
  • 1 T water
  • 1/4 cup raisins (or chocolate chips)
  • optional; nut butter (I think I will add a nut butter the next time I make these in hope they will stick together better)
Directions:
Add nuts to food processor until finely ground. Pulse in cocoa powder and sea salt until combined. Pour in to small bowl and set aside.
Add dates to food processor and pulse until finely ground. Remove from processor and set aside.
Pour cocoa and nut mixture back in to processor and slowly drop in dates as processor is running. Add 1 T of water and nut butter if using.
Stir in raisins or chocolate chips.
Press into an 8 x 8 inch baking pan and set in freezer OR press in to individual ramekins.
Nutritional Profile: 154 calories, 6.7 g fat (0.8 sat, 1.5 poly, 4.0 mono), 0 mg cholesterol, 21 mg sodium, 328 mg potassium, 25 g carbohydrate, 4.7 g fiber, 17.4 g natural sugars, 4.0 g protein, Vitamin E: 15%, 16% magnesium, 26% manganese, 10% phosphorus, 17% copper
